Serves: 4 Prep Time: 10 Minutes Cooking Time: 15 Minutes



  • 200g dry penne pasta

  • 110ml olive oil

  • 4 cloves garlic, finely chopped

  • 2 x 400g tins chopped tomatoes

  • Juice of 1/2 lime 

  • 1 tsp sugar

  • 1 tsp oregano

  • 3/4 tsp salt

  • 1.5 tbsp Melody Sauce

  • 1 tbsp drained capers (optional)

  • 1 handful of fresh basil to garnish

  • 1 tbsp grated parmesan to garnish



  1. In a large frying pan heat olive oil and add the chopped garlic, stir for 1-2 minutes.

  2. Next, add the chopped tomatoes, lime, sugar, oregano, salt, Melody Sauce and capers. Stir, reduce heat and simmer for 20 minutes. 

  3. In the meantime, cook the penne in boiled water, remove a small cup of the water at the end. 

  4. Now here's the trick - once the sauce mix is ready, put the pasta, pasta water and sauce mix in a pot, heat and stir. 

  5. Serve and enjoy sprinkled with a handful of fresh, torn basil and some grated parmesan.
